Ingredients:
- 3lb pork belly
Spice mix:
- 2 tablespoons sugar
- 2 tablespoons coarse salt
- 2 tablespoon paprika powder
- 1 tablespoon cumin seeds, ground
- 1 tablespoon garlic flakes
- 1 tablespoon mild chili powder
- 2 teaspoons dry mustard powder
- 1 teaspoon ground black pepper
Fuel: equal parts of hickory and cherry
Instructions:
Make the spice mix; combine all ingredients in a bowl.
Remove any skin from the pork belly.
Sprinkle the pork belly with the spice mix and rub with your fingers.
Preheat smoker to 220F.
Add wood chips next to heat source.
Place the pork belly onto smoker rack, fat side up, and smoke 3 to 31/2 hours or until the inner temperature is 160F.
Slice the pork and serve.
You can additionally grill the slices on the heated grill for 2 minutes per side.
